Scalloped Potatoes

Potatoes are a staple in our house so I constantly try to come up with ways other then mashed to serve them. This is my favorite...scalloped potatoes! From Recipezaar.

Ingredients
4 Cups Thinly Sliced Potatoes
3 Tbsp. Butter
3 Tbsp. Flour
1 1/2 Cups Milk
1 Tsp. Salt
Dash of Cayenne Pepper
1 Cup Grated Cheddar Cheese
1/2 Cup Grated Cheese, to sprinkle on top
Paprika

In a small sauce pan melt the butter and blend in the flour.
Let sit for a minute.
Add all of the cold milk, stirring with a whisk.
Season with salt and cayenne.
Cook sauce over low until smooth and boiling, stirring occasionally.
Reduce heat and stir in cheese.
Place half the potatoes in a lightly greased casserole dish.
Pour half the cheese sauce over the potatoes.
Repeat with the second layer of potatoes and cheese sauce.
Sprinkle the remaining cheese on top.
Top with paprika for colour.
Bake uncovered for about 1 hour at 350 F.
